Adventures in Gluten Free

So due to an extreme digestive event last month, I've been 100% gluten free (meaning nothing from wheat rye or barley) for weeks now. It's not as tough as I thought it might be because I can cook common things from scratch, but you cut out pretty much all fast food, and nearly all things "instant". Things like processed cheeses, soy sauce and teriyaki commonly contain gluten as well, and most instant packs are seasoned with soysauce. I'm always reading the ingredients now.

We tried DeBoles brand rice pasta [link] for spaghetti. While I got nervous as it was cooking (clumped for a while, and water turned to milk almost), the end result with tomato sauce and cheese is great! I'd love to try it out with a white sauce eventually.

I still need to try the bread, and the flour, but I thought I'd share. You don't really see many peoples testimonials regarding "special" products in the health food sections.

Not in a hives and swelling sense, but yes. Not officially diagnosed (because it requires me to keep eating what hurts me, and they would need a biopsy which I'm scared of), but celiacs fits a very long bill of problems i've had. Even dental.

hello there, i just stumbled upon your page today and saw your journal. i've had celiacs for almost a year now, and like you said, finding gluten free food isn't too hard as long as you know what you're looking for. making it is even easier.
looks like you found noodles already. there are brown rice noodles and asian rice noodles. there are some good and fast recipes for noodles. browse around on the internet for a while, you'll find quite a bit.

as for flour and breads. there are a number of mixes you can buy or make. i'm lucky enough to have landed myself a job at a gluten free bakery, we make gluten free flour mixes if you're interested in trying them [link]
there are a ton of cake, bread and cookie mixes you can find online and off, i suggest getting a few of the same recipes in different brands to see what you like best. you might have more luck at larger grocery stores with natural food sections or natural food stores. and usually the gluten free shelf bread is fucking horrible D: watch out for it.
